CAMP KAI: NOX NACHOS

A whānau favourite and bonafide winner at Māori camp.
The menu most Monday's at the Lucas whare (house) doesn't change too much. It's a simple yet delicious vegetarian nacho dish from the Revive Cafe Cookbook that has also been a hit on the college's camps. Since 2019 when first introduced at Māori camp, hungry kids have devoured this kai reka (delicious food) and have been coming back for more. Here it is...
NOX NACHOS
CHILLI BEANS
1 can mild chilli beans
1 can baked beans
1 can whole kernel corn
1 onion chopped
2 cloves garlic (chopped or crushed)
1 tbsp oil
1 tsp cornflower
1 tbsp cold water
OTHER INGREDIENTS
1 bag corn chips
1 carrot grated
1 red capsicum diced
1/2 cucumber sliced
cheese grated
garlic hummus
fresh green lettuce
WHAT TO DO
1. Select a large pot and saute the onion, garlic and oil for about 5 minutes or until clear.
2. Add baked beans, chilli beans and kernel corn and stir until bubbling.
3. Mix together the cornflower and water and pour in the mix to thicken, stirring for around 30 seconds.
4. Layer your plate with corn chips, chilli beans and vegetables.
5. Finish with cheese and hummus to you liking.
You can add almost any fresh salad to this meal and don't forget to say karakia. Makes 4 x 1 cup serves. Enjoy!
