Nox Nachos

Named after Mt Nox, a mauka (mountain) seen from Paradise Station, Tāhuna (Glenorchy) this is a tried-and-tested whānau favourite kai and is on the menu at Māori camp next week.

Kīnakihia pīni (Bean Ingredients)

  • 1 can mild chilli beans

  • 1 can baked beans

  • 1 can black beans (rinsed)

  • 1 can corn kernels

  • 1 onion, chopped

  • 2 cloves garlic, chopped or crushed

  • 1 tablespoon oil

  • 1 teaspoon cornflour

  • 1 tablespoon cold water

Kīnakihia ērā ātu (Other Ingredients)

  • 1 large bag corn chips

  • 1 carrot, grated

  • 3 tomatoes, cubed

  • 1 yellow capsicum

  • Fresh green lettuce

  • Hummus

Pēwheatanga tunu kai (Cooking method)

  1. Select a large pot and sauté the onion and garlic in the oil for about five minutes, until clear.

  2. Add the chilli beans, baked beans, black beans, and corn kernels, and stir until bubbling.

  3. Mix together the cornflour and water, then pour into the pot to thicken, stirring for around 30 seconds.

  4. Layer your plate with corn chips, bean mix, and vegetables.

  5. Finish with a generous spoonful of hummus.

Makes 4 x 1-cup servings
