Course Outline
Food and Nutrition is a one year course of practical and theoretical cookery and hospitality skills.
Assessment
All standards are internally assessed using both written and practical work. There is no external assessment.

US 15901 Prepare and present fruit and vegetables in the hospitality industry – 3 credits
US 15919 Prepare and present hot finger food in the hospitality industry - 2 Credits
US 15921 Prepare and cook a cake, a sponge and a batch of scones in the hospitality industry. - 3 Credits
US 21057 Prepare, construct and garnish mocktails for the hospitaliy industry. - 2 Credits
US 21059 Demonstrate knowledge of knife care, use, storage and and carrying for the hospitality industry. - 2 Credits
