Course Outline
Food and Nutrition is a one year course of practical and theoretical cookery and hospitality skills. All standards are internally assessed using both written and practical work. There is no external assessment.

US 167 - Practice food safety methods in a food business under supervision. 4 credits
US 13280 - Prepare fruit and vegetable cuts in a commercial kitchen. 2 credits
US 13282 - Prepare and present salads for service 2 credits
US 13285 - Handle and maintain kitchen knifes in a commercial kitchen. 2 credits
US 22234 - Compare characteristics of international dishes and prepare and present international dishes. 4 credits
US 30895 - Demonstrate knowledge of basic nutrition commercial catering 4 credits
Where Does It Lead
Tertiary study in the hospitality field.
Employment in the hospitality industry, including self employed business owner, chef, kitchen hand, caterer, and general life skills.
